Cöödie

How did you get started in your career?

Before starting Cöödie, I spent almost twenty years working in the aviation industry.

At a certain point, I realised I wanted a complete change of direction and to build something of my own. I had always been interested in food, hospitality and design, and eventually decided to leave aviation and focus fully on creating Cöödie.

Opening our first shop in Peckham was a huge step for us, and expanding into Marylebone has been an exciting next chapter.

What’s unique about your company?

What makes Cöödie different is that we never approached it as a traditional bakery.

From the beginning, we were more interested in contrast, balance and flavour combinations that people might not normally associate with cookies. Some ideas come from desserts, while others are inspired by ingredients you would not usually expect to find in pastry.

A lot of attention also goes into the atmosphere around the product — the materials, the music, the spaces and the overall feeling of visiting the shops.

At the end of the day, we simply wanted to create something memorable that people would genuinely want to come back to.

What’s next for you or your business?

Right now, our main focus is continuing to build and refine the Marylebone shop while developing the brand carefully over time.

We’re also exploring collaborations and opportunities that feel aligned with what Cöödie is becoming, particularly within hospitality, retail and design-led spaces.

At the same time, we want to stay very conscious of protecting the identity of the brand as it grows.

For us, it has never been about growth for the sake of growth, but about building something with long-term character.
